Bilberries, or sometimes referred to as European blueberries as they’re very similar in appearance to North American blueberries, are a primarily Eurasian species of low-growing shrubs in the genus Vaccinium, bearing edible, dark blue berries. The species most often referred to is Vaccinium myrtillus L., but there are several other closely related species.
Culinary Herbs & Spices
The fruits are eaten fresh or made into jams, fools, juices or pies. In France and Italy they are used as a base for liqueurs and are a popular flavoring for sorbets and other desserts.
